How do we get some of your amazing regenerative lamb to eat?
Our main priority is to produce the highest quality, nutrient dense food for that is possible for a human to eat. Our second priority is to align with the natural cycles of the prairie grasses and regenerate the landscape. This puts us in the unfortunate position of harvesting our lambs in early July. Not ideal for butchering, but we make it work.
Our lambs are typically born in May, out on pasture on green grass. We raise them for 14 months. At a year old they get to experience the glory of a Midwest summer and fatten up on the rich grasses of May and June. We schedule their harvest at 14 months in early July. Just before the transition from Lamb to Mutton, at the peak of their vigor and fattened from the high energy Spring and early Summer grasses. We never feed grain. We use no antibiotics, de-wormers or other chemical interventions in the lambs that become human food.
We only sell whole animals. If you’re adept enough to understand why it’s worth buying meat from our farm, then you’ll get it. You are a person of caliber who is capable of enjoying those lesser known, but deeply rich and meaningful cuts that often get overlooked at the butcher shop.
